Classic 3 "C" - Chinese Curry Chicken.
One of the tastiest grandma recipes that I recall! Wonderful paired with a bowl of white rice, or dip into the creamy spicy sauce with a piece of bread. oh sooo yummy! :)
Here's the ingredients:
1 whole chicken
2 holland potato
1 cup curry paste
2 tbs curry powder
3 stalk curry leaves
1 packet of coconut milk
1/2 tablespoon salt
a handful of shallots
*optional : 1/2 tablespoon of sugar
Steps:
1. Fry the shallots in some oil. Add curry paste. Fry til fragrant at low heat.
2. Add in the pre-marinated chicken with curry powder and salt.
3. Add 2 bowls of water.
4. Add the potatoes, curry leaves, and finally coconut milk (and sugar - optional).
5. And its done!
