ABC MEATBALL SOUP | KIDS FRIENDLY | 简单又美味ABC炖汤

Today marks one of the milestones in my life. Starting a cooking blog!

Why? Because I like to cook, and I like to take videos of the process as keepsake.
What I envision of this blog, is to hold memories of recipes, hand over or by memory from my grandmother. And also to add my own twist. Basically everything under the stars that is tasty!
From traditional cuisines to experimental ones (yes you heard right!), from mains to desserts, from typical Asian to international.
Based on my family's craving, or my very own craving. :P

So, let us begin!

ABC Meatball Soup

A delicious and healthy soup for the whole family! If you have toddlers at home or small kids who doesn’t like the meat too tough, try this recipe with homemade meatballs! 😊

Here's the recipe:
Pork ribs 400g Minced pork 200g 1 corn 1 carrot 2 tomatoes 5 BIG red dates - cut in middle wolfberries handful *salt to taste 1/2 small teaspoon

Steps / Instructions:

1. Boil a pot of water. Blanch the ribs for 2 minutes and quickly remove from the boiling water. This is to remove impurities and 'dirty blood' (as my Ah Ma will say), making the soup SUPER SWEET!

2. Boil a new pot of water. Turn the fire to high heat.

3. Add in EVERYTHING - Pork ribs, corn, carrots, tomatoes, red dates and wolf berries. Remember, slice the red dates in the middle to allow the sweetness flavour to release from the insides of the dates easily. Rinse the wolfberries too!

3. When the soup starts to boil, turn the heat down to low heat. (you may also use a slow cooker for 1-2 hours or thermal pot which can save electricity and keep it warm!)

4. For the meatballs, marinate with a dash of sesame oil, 1/2 a teaspoon of corn starch and light sauce each. Add into soup.

5. Time for 50minutes and it will be done!

SO SIMPLE, right??

*Plus tIp for busy working mums - throw everything together, boil for 15minutes in a thermal pot. Remove from fire. Put lid on for the next 8-10hours in the thermal pot, and when you return from work, there you have it!!
