A simple yet healthy soup rich in anti oxidant!
Do you know that tomatoes contain lycopene, a strong anti-oxidant that is cancer-fighting? Yes!! It is, and lycopene is released in high heat in oil AKA when the tomatoes are lightly stir-fried in oil! Yes, one of the healthy foods that is actually HEALTHIER when fried. :)
What's even better is that this soup takes only 10 MINUTES and requires just THREE ingredients: EGGS TOMATOES SPRING ONIONS!
Can you believe how simple it is? Let's start cooking! :D
Ingredients:
2 eggs
3 tomatoes - cut into quarters
spring onions
Seasoning:
Salt 1/2 tsp
White pepper
Sesame oil
Chicken powder (optional)
Steps:
1. Heat pan and add some oil. Stir fry the spring onion stalks for 2 minutes.
2. Add in the tomatoes Smash the chopped tomatoes with the spatula.
3. Fry at low heat to a paste-like consistency for 5minutes.
4. Add 1/2 teaspoon of salt and a dash of white pepper
5. Add in 2 bowls of water
6. Beat 2 eggs. Gently pour it into the soup in a circular motion
7. Add in 1/4 teaspoon of chicken powder (optional)
8, Add in chopped spring onions and a dash of sesame oil.
